It seems as though summer goes by faster and faster each year. I don't know why that is. Summer is fleeting too quickly. All of the time we spend hoping and waiting for the warm months of the year, and “poof,” they are gone in the blink of an eye.
This summer is no exception. Our garden grew out of control before our very eyes. Our thyme, savory, and oregano came in late spring. The chiles and tomatoes are now following suit. The vegetables are exploding with great flavors.
Each year we try to do our best to hold on as long as we can because we know the fall and winter are right around the corner. For those months we are aware we aren't getting any great produce from anywhere near us. Michigan has, what seems to be, a very long winter, and a very short summer.
My goal when I cook is to create the best-tasting food with as little hassle as possible. That is why I created this tomato sauce. This is summer all year long.
When you are making this easy tomato sauce, make sure you allow the tomatoes and other vegetables to caramelize in the oven. Caramelizing the tomatoes, and other vegetables develop the flavor of the sauce.
I prefer to use a food mill to grind the sauce. The food mill leaves the sauce with a little bit of texture and is not completely smooth.
If you do not already have a food mill you can use a blender or a food processor. Be sure to pulse either of those machines to leave some great texture to the sauce. OH, and do not forget to remove the bay leaves before you grind the sauce, no matter which method you choose.
